What’s Micro Roasting?

Certainly micro-roasting coffee is a complex science, but it is also an
intricate art. We roast our beans in the small college town of Athens, GA – a community that is known for its university and its diverse culture. Our experts in the roasting process come from this community of artists; dedicated people who work throughout all hours of the day because they share your artisanal passion for coffee. We think Jittery Joe’s Coffee’s commitment to detail and the sense of pride we have in our work can be tasted in the coffees we produce.

We purchase only the top 1% of coffees in the world! Our Roast Master inspects each bag of coffee before roasting to make sure the beans meet our rigorous standards of freshness, shape, size and quality. We then roast our carefully selected varietals in small batches to provide our customers with the highest quality and freshest coffee possible. Coffee is then shipped within 48 hours of roasting to ensure that you are getting only the very best.

When you are in the Athens area stop by our roasting facility, we'd love to show you around. You can sit on the porch with a shot of espresso or a fresh cup of coffee. We hope that our commitment to quality makes your life a little more enjoyable. Roasting Terminology

The following roast terms are not standardized. Roasters use the terms differently around the country. Here we set out our meaning of each roast level to help you determine the roasting level that’s best suited for your taste preferences.

Medium Roasts

The American roast is the lightest of all the mediums and also the lightest roast offered by Jittery Joe’s Coffee. This bright roast allows the full natural varietal flavor of a coffee to shine through and displays no trace of the “roasty” flavors found in the darker roast coffees. Our medium roasts include:

The next darkest is the city roast which adds a nice sweetness to the medium roast.

Full City Roasts

The full city roast hovers between the brightness of the medium roasts and the richness of dark roasts. This roast is very sweet, but begins to acquire the big body and spicy aroma of a dark roast. Full Cities are usually grouped with the dark roasts, but we give them their own category here for the sake of clarity. Our full city roasts are:

Dark Roasts

At what is called the “Vienna” roast, the beans begin to take on an oily sheen. This is a sign that the smoky taste, imparted by the roasting process, is beginning to appear in the flavor of the bean. The “Italian” roast displays patches of concentrated oil and is “roastier” still. Finally, at the “French” roast, the beans are covered with oil. At this point, the varietal characteristics of the coffee have been overcome by the intense taste of the roast. The dark roasts we offer are:
